A Fun and Wholesome Snack for Tots

Cucumber is one of the most refreshing and hydrating vegetables you can eat all year round. 95% water, it’s especially good for summer heat and can actually help to quench your thirst. It’s also rich in vitamins A, B, C & D plus folate, calcium, magnesium, potassium and silica, known for promoting healthy joints and connective tissues.

Here’s a creative meal “package” for young children, but the truth is, this is great for kids of all ages. Serve these artsy little cucumber cups filled with some of your child’s favorite things. You could even fancy them up a bit and serve them as hors d’oeuvres at a grown up party! 

Here are just a couple of toddler-friendly examples:

Peel a cucumber. Slice it into even 1½ inch sections. Scoop out the insides, leaving just enough at the bottom of the cucumber section so it creates a cup. Fill cucumber cup with hummus, carrot and pepper sticks. Or how about egg salad or chicken salad? Serve with some pita chips and you’ve got either a meal or a snack.
